Green Detox Soup with Toasted Hemp Gremolata

Ingredients

  • 2 tablespoons high-heat oil (avocado or olive oil)
  • 1 medium yellow onion, roughly chopped
  • 1 fennel bulb, roughly chopped (fronds reserved)
  • ½ teaspoon fine sea salt
  • 2 cups chopped kale leaves
  • 2 cups low-sodium vegetable broth
  • 1 garlic head, minced
  • ⅓ cup hulled hemp seeds
  • Grated zest and juice of 1 lemon
  • ¼ cup loosely packed fresh cilantro
  • ¼ cup loosely packed fresh flat-leaf parsley
  • Freshly ground black pepper (optional)

Instructions

Make the Soup:

  1. Heat 1 tablespoon of oil in a large pot over medium-high heat.
  2. Add onions, fennel, and ¼ teaspoon salt; cook until onions begin to brown, about 3-5 minutes.
  3. Stir in the kale and cook until wilted, about 3-4 minutes. If needed, add 1 tablespoon of water at a time to prevent sticking.
  4. Pour in vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 10 minutes.
  5. Remove from heat and immediately stir in two-thirds of the garlic. Let soup cool, uncovered, for 10 minutes.

Make the Gremolata:

  1. Heat the remaining 1 tablespoon of oil in a skillet over medium heat.
  2. Add hemp seeds, remaining salt, and garlic. Spread into a single layer and cook, stirring occasionally, until golden brown and fragrant (about 3 minutes).
  3. Transfer to a bowl, add chopped fennel fronds, lemon zest, cilantro, parsley, and lemon juice.

Blend & Serve:

  1. Blend the soup until smooth and creamy using an immersion blender (or transfer to a blender in batches).
  2. Ladle into bowls and top with toasted hemp gremolata.
  3. Garnish with black pepper, if desired.
